The name comes from the city of San Marzano in Sarno. Has an elongated shape, and is particularly suitable for preparing peeled and preserved tomatoes. The protected designation of origin (PDO) is reserved for the tomato that meets the conditions and requirements established by the rules of the Disciplinary production and processing of the Protected Designation of Origin "San Marzano Tomato Agro Sarnese-Nocerino."

For the tomato to be able to be get the protected designation of origin (PDO) "San Marzano Tomato Agro Sarnese-Nocerino" must be produced by farms in the territorial areas of the Nocera-Sarno that extends from the plain of Sarno. The geographical area of ​​the PDO is made up of forty-one municipalities belonging to the provinces of Salerno, Naples and Avellino. According to the law, the collection of the fruits must be performed by hand when they reach full maturity, and it takes place in different stages.
